Cleaning Soft Crabs: Step 1 Cut crab across the face at an upward angle so that the eye sockets and scaly section of the lower mouth are removed. Step 2 Lift each side of the shell and remove gills. Step 3 Turn crab over. Cut off the bottom apron. Step 4 Rinse crab and pat dry. NOTE: Always clean Soft Crabs immediately prior to cooking them. If you clean them before you are ready to cook them, you will lose all the “moisture” that makes them a delicacy. Soft Crabs can be stored in the refrigerator, just keep the bag open to let them breathe. Our soft crabs freeze well, so you can stock-up for special dinners. Simply freeze them undressed (whole), just as you purchased them from us. Wrap each crab separately in plastic and freeze together in a freezer bag. To Cook: The whole body of the soft shell crab can be eaten, making the soft shell crab sandwich a popular way to prepare the crab. Step 1) Dip soft shell crab into beaten egg. Step 2) Dredge crab through flour and any seasonings, thoroughly coating crab. Shake off any excess flour. Step 3) Heat 1/2 olive oil and 1/2 butter in frying pan over medium-high heat. Step 4) Place crab in pan and cook for four to five minutes on each side or until brown. Step 5) Remove crabs from pan and drain on paper towels. ENJOY! Coveside Crabs 410-477-4709
